To chef Sylvain Bouchard, "California cuisine" means local ingredients, influences from three (or more) continents and a willingness to experiment. The combination is working very nicely at this little place well east of the trendy part of Laurier Ave. The foie gras appetizer is well worth the $18 cost: a nirvana of tender liver slices stacked with tiny pancakes of figs and hazlenuts.

Main dishes—around $12 to $15—are less ambitious but adeptly done, and marked hy as many as 10 different vegetables on each plate, every one perfectly cooked. Desserts, too, show imagination mated with artistry.
